Just off the extensive portici covered sidewalks in Bologna on Via de Monari, there is a small shop serving generously sized panini and cones full of mortadella. With so many different topping combinations, one could likely come back every day for lunch for a month and not run out of things to enjoy.
My favorite was easily panini #19 - Involtini (rolls) di mortadella with Buffalo ricotta, ground pistachio, sundried tomatoes, and arugula. I've tried to replicate it at home to some success, but nothing beats the food quality in Italy, especially in the Emilia-Romagna region.
If you haven't tried a roll of mortadella with a slice of fresh mozzarella and a sprinkle of pistachios inside as a snack, do it. The combination is *chef's kiss*. Add a little strip of roasted red pepper too and good olive oil, if you have it. Ooh, baby!
